Red Clover Jelly/Honey
Infusion:
5 cups white wine or apple juice (apple juice really changes the flavor to taste just like apple jelly, so I use the wine, which really brings out the natural clover flavor)
2-3 cups red clover (flower top only)
in a glass bowl
Bring wine or juice to a boil, and pour over the clover. Cover and let steep overnight.
Strain and reserve liquid.
For the jelly:
4 cups infusion
8 cups sugar
1/2 cup lemon juice
6 oz liquid pectin

Combine infusion, sugar and lemon juice in a pot over high heat. Bring to a boil.
As soon as sugar has dissolved, add pectin.
Return to a rolling boil for 1 minute.
Skim foam and pour into prepared jars, 4 or 8 oz only, water bath for 20 minutes.
I replaced liquid pectin with an equivalent amount of powdered. It turned out more like a honey consistency, which drizzles nicely over bread, waffles, ice cream! Enjoy!
**Make sure you only forage for clover in areas that haven’t been sprayed with any chemicals**
